Cake Pops Recipe

Fun with the kids in the kitchen!

Quick and easy Cake Pops for all to enjoy. A simple yet tasty treat to celebrate, delight and enjoy with all kids in their month.

Instructions
Cake

Preheat the oven to moderate temperature and butter a pan.

Use a mixer to cream together the sugar and butter. Beat in the eggs, one at a time, and then stir in the vanilla extract. Mix well.

In a bowl, combine flour, baking powder, and salt. Add half of this mixture to the previous creamed mixture and mix well. Stir in the milk until batter is incorporated. Finally, add the other half of the flour mixture.

Pour batter evenly into the pan and bake for 25 minutes. After the cake is done, let it cool down.

Icing

Beat the butter and the confectioners’ sugar until fully incorporated. Then add the vanilla extract, the whipped cream, and salt. Mix well.

Crumble the cake into large crumbs and add them to the icing mix. Mix with your hands. Take chunks of the mixture with a spoon and roll into small balls, transferring each ball to a tray. Put the tray into the fridge for an hour until the iced cake balls get solid and then push a lollipop stick into each of them.

Chocolate frosting

Melt the chocolate with the coconut oil using the water bath method. Dip each cake ball into the melted chocolate and let it drip off a little. Decorate with colored sprinkles and put Cake Pops into a tray. Put into the fridge until the frosting dries.

Cake

  • 1 cup of butter
  • 1 cup of sugar
  • 3 eggs
  • 2 teaspoons of vanilla extract
  • 2 cups of flour
  • 2 teaspoons of baking powder
  • 1 teaspoon of salt
  • 1 cup of milk
  • Icing

  • 12 tablespoons of butter
  • 3 cups of confectioners' sugar
  • 1 teaspoon of vanilla extract
  • 3 tablespoons of whipped cream
  • A pinch of salt
  • Chocolate frosting

  • 2 tablespoons of dark or white chocolate
  • 2 tablespoons of coconut oil
  • Colored sprinkles
